2 medium-sized, well-formed yams

1/2 teaspoon ground allspice

1 large apple, cored, peeled, and thinly sliced

Pure maple syrup to taste (optional)

Rinse whole potatoes and cut them in half lengthwise. Place each half on a large piece of aluminum foil. Sprinkle the top of each yam half with a pinch of allspice. Place one-quarter of the apple slices across the top of each one and sprinkle with remaining allspice. Wrap them tightly in foil so that the apples are secure on top. Bake them in a 350-degree oven for about 30 minutes, or until the centers are soft when pierced with a knife. Unwrap to serve. While they are still hot, drizzle on maple syrup (or raw honey), if desired.

Sweet Tip: When yam is sweet, it’s like candy. To pick one out, break a tiny piece off the tip when it is raw. The brighter orange it is inside (as opposed to pale yellow), the sweeter the yam.
