Vanilla Ice Cream Flavored Oatmeal

Cooking oatmeal is a simple and quick process. One of my favorite secrets is to use flavored non-dairy coffee creamers. I love vanilla, caramel macchiato, Irish cream. There are other flavors too. Give this a try, and you can have oatmeal as a treat.

Extra note: I usually eat 1 cup of oatmeal. It’s filling to me. So when you prepare oatmeal, remember that your measurements dry will double when cooked. For instance, 1 cup of dry oatmeal is two cups when cooked.

Ingredients:

1 cup rolled oats

2 cups water or milk (or a combination of both)

A pinch of salt (optional)

Sweetener (such as brown sugar, honey, or maple syrup) and toppings (such as fruit, nuts, or cinnamon) as desired

Stove-Top Instructions:

In a medium-sized saucepan, bring the water or milk (or a combination of both) to a boil.

Add the rolled oats to the boiling liquid, stirring occasionally.

Reduce the heat to low and let the oats simmer for about 5-10 minutes or until they reach your desired consistency. Stir occasionally to prevent sticking to the bottom of the pan.

Add a pinch of salt if desired and any sweeteners you prefer (brown sugar, honey, or maple syrup) to taste.

Remove from heat and serve hot, with your choice of toppings (such as fruit, nuts, or cinnamon).

Microwave Instructions

Combine water or milk, salt, and oats in a medium microwave-safe bowl. Microwave on HIGH for 2 1/2 to 3 minutes; stir before serving.
